Dr. Fleming interviews his son, Chef Garret Fleming (former head chef of Pig and now of Barrel in Washington DC) on the art of raising pigs, smoking and curing bacon. If only we could capture the smell on the website! He concludes with a humorous pig on the lighthearted subject of how not to kill a pig.

    Great show, Dr Fleming. I give it 4 chops. Garret has star quality. I was delighted to hear him mention world famous Alan Benton. Before my mother-in-law died a few years ago, we would go up to her farm in East Tennessee four or five times a year. By then, Alan’s fine pork products were becoming the rage in Atlanta’s better slow food joints. We would often stop off at his little concrete block operation on 411, in Madisonville (home of Estes Kefauver) for provisions. Usually Alan would be there himself in Dickies work pants and plaid shirt, and he would courteously slice you some bacon on the bandsaw himself. Good to hear the man has kept in touch with his roots, and hasn’t gone all pig-headed.
